Instructions

  1. Preparation of the Cucumber:
    Begin by thoroughly washing the yellow cucumber. Peel the cucumber and chop it into fine pieces.

  2. Tempering the Spices:
    Heat oil in a small pan over medium heat. Once hot, add mustard seeds, fenugreek seeds, and red lentils. Let them cook for about 1 minute until the lentils turn golden and the spices start releasing their aroma.

  3. Adding Dry Red Chilies and Asafoetida:
    Add the dried red chilies and asafoetida (hing) to the pan. Stir and let it cook for another 30 seconds. Once done, turn off the heat and let the mixture cool down.

  4. Blending the Spice Mix:
    In a blender, add half of the tempered spice mixture, salt, turmeric powder, and tamarind pieces. Blend everything together until it forms a smooth paste.

  5. Mixing the Pachadi:
    Now, in a bowl, combine the chopped cucumber with the blended spice paste and the remaining tempering. Mix everything well, ensuring the cucumber is coated evenly with the spices.
