Ingredients:

  • 1/2 kg village chicken
  • 3 cloves garlic
  • 5 shallots
  • 3 candlenuts
  • 1 small piece of ginger
  • 4 kaffir lime leaves
  • 1 bay leaf
  • 1 lemongrass (bruised)
  • Galangal
  • 1/4 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/4 tsp ground pepper
  • 3/4 tsp salt
  • 1/2 tsp sugar
  • A pinch of broth seasoning (Royco)
  • Sweet soy sauce (Kecap Manis), to taste
  • Village chicken broth, as needed
  • Cooking oil, as needed

Instructions:

  1. Prepare the Chicken: Cut and wash the village chicken, then boil until tender.
