Oseng Ayam Kemangi Recipe

Ingredients:

  • 250 grams chicken breast
  • 1/4 bunch of kemangi (Thai basil) or as preferred
  • 5 shallots, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 15 green chilies, thinly sliced
  • 3 red bird’s eye chilies
  • 1 segment galangal, smashed
  • Salt to taste
  • Sugar to taste
  • Cooking oil for sautéing
  • 3 cups water (for boiling chicken)

Instructions:

  1. Prepare the Chicken:
    Begin by boiling the chicken breast in 3 cups of water until it changes color and is fully cooked. Allow the chicken to cool, then cut it into bite-sized cubes. Reserve the chicken broth for later use, and do not discard it.

  2. Sauté Aromatics:
    Heat a generous amount of cooking oil in a pan over medium heat. Add the thinly sliced shallots and sauté until they become fragrant. Next, add the sliced garlic and stir briefly. Incorporate the green chilies, red bird’s eye chilies, and the smashed galangal into the pan. Continue to sauté until the chilies become tender.

  3. Combine Ingredients:
    Add the cubed chicken to the pan and stir well to combine with the aromatics. Pour in the reserved chicken broth (make sure to strain it to remove any impurities). Allow the mixture to cook until most of the liquid has evaporated.

  4. Add Kemangi and Seasonings:
    Once the liquid has reduced, add the kemangi leaves, salt, and sugar. Stir thoroughly until the kemangi leaves have wilted and everything is well combined.

  5. Serve:
    Your Oseng Ayam Kemangi is now ready to be enjoyed! Serve hot with steamed rice or as a flavorful addition to your meal.
