Ingredients

1/4 cup Diced tomatoes
3 Green peas
3 Onions
2 tsp Sugar
1/2 tbsp Fish sauce
1 White pepper
1/4 tbsp Soy sauce
1/4 tbsp Eggs
3 tbsp Cilantro leaf
1 Red chile

Instructions

  1. Prepare the Filling:

    • Heat half of the oil in a wok over high heat.
    • Stir-fry the ground pork for about 2 minutes until lightly browned.
    • Add diced tomatoes, green peas, onions, sugar, fish sauce, white pepper, and soy sauce.
    • Stir-fry for an additional 2 minutes until the vegetables are tender and the flavors meld together.
  2. Cook the Omelets:

    • Heat a 6-8 inch omelet pan and add a drop of the remaining oil.
    • Pour enough beaten egg to thinly cover the bottom of the pan.
    • Brown the omelet lightly on both sides, flipping over halfway through cooking.
    • Repeat until all the egg is used.
  3. Stuff and Fold:

    • Place a tablespoon full of the prepared pork mixture in the center of each omelet.
    • Fold two opposite sides of the omelet toward the center, then fold in the remaining sides to create a square shape.
  4. Serve:

    • Place the stuffed omelets on a serving plate.
    • Repeat the process until all omelets and pork mixture are used.
    • Garnish with cilantro leaves and sliced red chilies if desired.
