Instructions

- Add diced tomatoes, green peas, onions, sugar, fish sauce, white pepper, and soy sauce.
- Stir-fry for an additional 2 minutes until the vegetables are tender and the flavors meld together.

- Heat a 6-8 inch omelet pan and add a drop of the remaining oil.
- Pour enough beaten egg to thinly cover the bottom of the pan.
- Brown the omelet lightly on both sides, flipping over halfway through cooking.
