Soto Sapi Boyolali Recipe

Ingredients:

  • Main Ingredients:

    • 1/2 kg beef with a little fat, boiled until tender, then cut into pieces
    • 4 shallots
    • 6 cloves garlic
    • 2 cm ginger, crushed
    • 2 cm galangal, crushed
    • 1 stalk lemongrass, crushed
    • 2 bay leaves
    • 2 kaffir lime leaves
    • 1 teaspoon white pepper
    • Salt to taste
    • Beef broth seasoning (Royco sapi)
    • 1.5 liters of beef broth (from boiling the beef)
  • Garnishes and Complements:

    • Green onions, chopped
    • Celery leaves, chopped
    • Fried shallots
    • Blanched bean sprouts
    • Tomatoes, cut into pieces

Preparation Steps:

  1. Blend the Spices:

    • Blend the shallots, garlic, and white pepper into a fine paste.
  2. Sauté the Aromatics:

    • In a pan, sauté the blended spice paste with the ginger, galangal, lemongrass, bay leaves, and kaffir lime leaves until fragrant.
  3. Prepare the Broth:

    • Pour the beef broth into the pan with the sautéed spices.
    • Add salt and beef broth seasoning to taste.
    • Bring the mixture to a boil.
  4. Add the Green Onions:

    • Once the broth is boiling, add the chopped green onions. Allow them to cook for a few minutes until they are slightly tender.
  5. Assemble the Dish:

    • In a serving bowl, arrange the blanched bean sprouts, pieces of boiled beef, chopped celery leaves, and fried shallots.
    • Pour the hot broth over the arranged ingredients.
    • Garnish with the tomato pieces.
  6. Serving Suggestion:

    • Serve hot with sambal (Indonesian chili sauce) on the side for added spice.
