Instructions:

  1. Prepare the Rice:

    • Wash the basmati rice with water until it runs clear.
    • Place the washed rice in a saucepan with a good-fitting lid and add 400ml of water.
    • Bring the water to a boil, then reduce the heat to very low, cover, and cook for about 10 minutes.
    • Turn off the heat and let the rice sit, covered, for an additional 10 minutes to steam.
  2. Prepare the Prawns:

    • If the tiger shrimp are frozen, defrost them and remove the shells. You can save the shells for making fish stock later.
  3. Prepare the Sauce:

    • In a bowl, combine the orange juice, dry white wine, honey, wine vinegar, soy sauce, and slightly less than half of the fresh ginger. Mix the ingredients thoroughly.
  4. Cook the Prawns:

    • Heat the butter and oil in a wok or large frying pan over high heat.
    • Once the butter is bubbling, add the prawns, remaining ginger, garlic, and flaked almonds.
    • Stir constantly for 2-3 minutes, until the prawns are pink and the almonds are golden. Be careful not to overcook them.
    • Transfer the cooked prawns and almonds to a separate dish.
  5. Prepare the Sauce:

    • In the same pan, add the orange juice mixture.
    • Bring the mixture to a boil and let it cook for 8-10 minutes, or until it thickens and becomes a dark caramel color. It should reduce to about one-third of its original volume.
  6. Final Assembly:

    • Add the pineapple slices to the pan and heat through.
    • Return the cooked prawns and almonds to the pan, stirring constantly for about 30 seconds to coat them in the sauce.
    • Serve the prawns and pineapple sauce over the prepared basmati rice.
