Ingredients:

  • 1 cup pineapple tidbits, drained (juice reserved)
  • 1 package (0.3 ounce) sugar-free lime gelatin
  • 1 1/2 cups boiling water
  • 1 cup diet ginger ale
  • 1/4 teaspoon ground ginger

Instructions:

Step Description
1 Drain pineapple, reserving juice; set the pineapple aside.
2 In a bowl, dissolve the gelatin in boiling water.
3 Stir in ginger ale, ground ginger, and the reserved pineapple juice.
4 Chill the mixture until it becomes syrupy, approximately 45 minutes.
5 Transfer the gelatin mixture to a 6-cup mold coated with non-stick cooking spray.
6 Refrigerate the mold until the gelatin is firm.
