Stir-Fried Papaya Leaves with Tuna

Ingredients:

  • 1 bunch of papaya leaves
  • 10 guava leaves
  • 3 shallots
  • 2 cloves of garlic
  • 3 chili peppers
  • Salt or chicken bouillon (Royco)
  • 300 ml water (adjust according to the ingredients)
  • 3 tablespoons cooking oil
  • 1/2 small can of tuna (or more, to reduce bitterness)

Instructions:

  1. Prepare the Leaves:

    • Begin by boiling the papaya leaves together with the guava leaves. This step helps to reduce the inherent bitterness of the papaya leaves.
    • Once the leaves are tender, remove them from the boiling water, drain well, discard the guava leaves, and squeeze out any excess water from the papaya leaves. Then, slice the papaya leaves into bite-sized pieces.
  2. Sauté the Aromatics:

    • Slice or crush the shallots, garlic, and chili peppers.
    • Heat the cooking oil in a pan over medium heat, then add the sliced shallots, garlic, and chili peppers. Sauté until the mixture becomes fragrant and the shallots turn translucent.
  3. Add the Tuna:

    • Add the tuna to the pan and stir well to combine with the sautéed aromatics.
  4. Simmer the Dish:

    • Pour in the water and bring the mixture to a boil.
    • Add the sliced papaya leaves to the pan, stirring to incorporate them into the mixture.
  5. Season to Taste:

    • Season the dish with salt or chicken bouillon (Royco) to taste. Allow the mixture to simmer until the flavors meld and the dish is heated through.
