Underwoods Cherry Cobbler 🍒
Description
Got this from a family cookbook. I think it originally came from a restaurant that is no longer in business. It is wonderful. The best cherry cobbler I’ve ever eaten. I think the crust is the key. Enjoy!!!

Instructions
-
Combine Crisco and flour: In a bowl, combine the Crisco and all-purpose flour. Mix well until the mixture is uniform.
-
Add salt and water: Add 2 1/4 teaspoons of salt to the mixture. Then, add enough cold water to make the ingredients cling together.
-
Roll out the dough: Roll the dough until it is very thin, ensuring an even thickness throughout.
-
Prepare the pan: Cut up the butter or oleo into pieces and place them in a 12 x 13 inch pan, ensuring even distribution.
-
Combine dry ingredients: In a separate bowl, combine the sugar, 1 1/4 teaspoons of salt, and 1 cup of flour. Mix the ingredients well until thoroughly combined.
-
Prepare cherry mixture: In another bowl, mix together the cherries, 1 cup of water, and any desired food coloring. (Alternatively, you can cook these ingredients in a saucepan until thickened, stirring frequently.)
-
Combine cherry mixture with dry ingredients: Add the cherry mixture to the bowl of dry ingredients. Mix well until all ingredients are fully incorporated.
-
Pour cherry mixture over butter: Pour the cherry mixture evenly over the butter in the pan, ensuring full coverage.
-
Top with crust: Place the rolled out crust over the cherry mixture in the pan, covering it completely.
-
Bake: Preheat the oven to 350°F (175°C). Bake the cobbler until the crust is golden brown, approximately 30 minutes.
-
Serve: Once baked, remove the cobbler from the oven and allow it to cool slightly before serving. This cherry cobbler is best enjoyed warm and pairs wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream.
