Favorite Enchilada Casserole

Ingredients:

  • 1 1/2 pounds ground beef
  • 1 1/2 teaspoons ground cumin
  • 4 teaspoons chili powder
  • 1/2 teaspoon black pepper
  • 2 medium onions, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons salt
  • 1 1/2 cups beef broth
  • 12 corn tortillas
  • 1 cup sour cream
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1 cup taco sauce (divided)

Instructions:

  1. Prepare the Beef Mixture:

    • Preheat your oven to 375°F (190°C). In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
    • Add the chopped onions, garlic, ground cumin, chili powder, black pepper, and salt to the skillet with the beef. Cook for 2-3 minutes, allowing the onions to soften and the spices to release their aroma.
    • Pour in the beef broth and stir well. Reduce the heat to low and let the mixture simmer uncovered for about 10 minutes, allowing the flavors to meld together.
  2. Assemble the Casserole:

    • Spread 1/2 cup of taco sauce evenly over the bottom of a 9×13-inch casserole dish.
    • Arrange half of the corn tortillas over the sauce, slightly overlapping them to cover the bottom of the dish.
    • Pour 1/2 cup of taco sauce over the tortillas, spreading it evenly.
    • Spoon half of the beef mixture over the tortillas, spreading it out with a spatula.
    • Dollop the sour cream over the beef mixture, and sprinkle with 1/2 cup of the shredded Monterey Jack cheese.
  3. Layer and Chill:

    • Layer the remaining tortillas on top of the sour cream and cheese, again overlapping them slightly.
    • Pour the remaining taco sauce over the top layer of tortillas.
    • Sprinkle the remaining Monterey Jack cheese over the top of the casserole.
  4. Refrigerate and Bake:

    • Cover the casserole dish with plastic wrap or aluminum foil and refrigerate for at least 24 hours. This allows the flavors to meld together and makes for a more cohesive casserole.
    • When ready to bake, remove the cover and place the casserole in the preheated oven. Bake for 1 hour, or until the cheese is bubbly and golden brown, and the casserole is heated through.
  5. Serve:

    • Let the casserole cool slightly before cutting into squares. Serve warm and enjoy the rich, savory flavors of this delicious enchilada casserole.
