Instructions:

1. Making the Stock:

  1. Cut away any excess fat from the dark chicken meat and place it in a Dutch oven or large stockpot.
  2. Add water, onion (whole), carrot (whole), celery (whole), parsley stems, peppercorns, and cloves.
  3. Bring the mixture to a boil, then reduce the heat to simmer. Skim off any foam that rises to the top.
  4. After 20 minutes of simmering, add the chicken breast to the pot.
  5. Continue to simmer for an additional 25 minutes or until the chicken is tender.
  6. Remove the chicken breast from the pot and set it aside to cool.
