Finally found this one in a church cookbook! This is for OzMartha who has a difficult time finding Reese’s Cups down under!! ๐
Ingredients:
- 1 cup peanut butter
- 2 tablespoons butter
- 1/2 cup brown sugar
- 1/2 cup confectioners’ sugar
- 1 cup chocolate chips
- 2 tablespoons vegetable shortening
Instructions:
- Mix peanut butter, butter, brown sugar, and confectioners’ sugar together in a bowl until well combined. Set aside.
- Melt chocolate chips and vegetable shortening in a double boiler or microwave, stirring until smooth. Optionally, add a small piece of wax to the mixture for extra shine.
- Place small paper liners in muffin tins to prepare for molding the peanut butter cups.
- Put a small amount of melted chocolate on the bottom of each paper liner, spreading it evenly to form a base.
- Add a small amount of the peanut butter mixture on top of the chocolate layer in each liner, spreading it out to cover the chocolate.
- Cover the peanut butter layer with more melted chocolate, ensuring it completely covers the peanut butter to seal the cups.
- Allow the peanut butter cups to cool at room temperature or place them in the refrigerator for faster setting.
- Once set, remove the peanut butter cups from the muffin tins and peel off the paper liners carefully.
