Ingredients:

  • 1/4 cup peanut butter
  • 1/4 cup shortening
  • 1/2 cup brown sugar
  • 1/4 tsp baking soda
  • 1 egg
  • 1 tbsp milk
  • 1/2 tsp vanilla extract
  • 2/3 cup all-purpose flour
  • 1/4 cup creamy peanut butter
  • 1/3 cup powdered sugar
  • 4 1/2 cups rolled oats
  • 1/4 cup milk
  • 1 1/2 tsp vanilla extract
  • 2 oz chocolate (for drizzling)

Instructions:

Step Description
1 In a large mixing bowl, beat together the peanut butter and shortening until smooth.
2 Add the brown sugar and baking soda to the peanut butter mixture, and beat until well combined.
3 Beat in the egg, milk, and vanilla extract until fully incorporated.
4 Gradually beat in as much flour as you can.
5 Stir in the remaining flour and rolled oats until a thick dough forms.
6 Spread the dough into an ungreased 8x8x2 inch baking pan.
7 Bake at 375°F (190°C) for 15-18 minutes, or until a toothpick inserted near the center comes out clean.
8 Allow the bars to cool on a wire rack.
9 To prepare the frosting, beat together the creamy peanut butter and 2 cups of powdered sugar until well combined.
10 Slowly beat in the milk and vanilla extract until smooth.
11 Gradually beat in the remaining powdered sugar until the frosting reaches a spreadable consistency. Add additional milk if needed.
12 Spread the frosting evenly over the cooled bars.
13 For an extra touch, drizzle melted chocolate over the frosted bars.
14 These bars are perfect for gifting to loved ones! To send them afar, line a baking pan with foil, lift the baked and cooled bars out in one piece, frost (omit the chocolate drizzle if desired), wrap in foil, and pack.
15 These bars are especially great for sending to those serving in the military, like my brother who was in the Navy. Now, my son is joining the Navy, so he’ll be receiving these treats too!
