Beef Enchilada Casserole 🌮

Description: This wonderful dish can easily be made ahead and frozen, so don’t let the large number of servings frighten you. It’s a Tex-Mex delight, perfect for lunches, snacks, or even potlucks!

Ingredients:

2 Chili sauce
2 All-purpose flour
4 Low-sodium tomato puree
1 1/2 Mild chili powder
1 Hot chili powder
1/4 Lean ground beef
12 6-inch tortillas
6 Sharp cheddar cheese
24 Monterey jack pepper cheese
Black olives

Instructions:

  1. Prepare the Enchilada Sauce:

    • In a medium saucepan, stir the flour and ¼ cup of the chili sauce together until the flour is dissolved.
    • Gradually stir in the remaining chili sauce, tomato puree, and chili powder.
    • Bring the mixture to a boil over medium-high heat, stirring occasionally.
    • Cook, stirring constantly, for about 2 minutes until slightly thickened.
    • Remove from heat and let cool.
  2. Cook the Beef:

    • Meanwhile, place a large nonstick skillet over medium-high heat and add the ground beef.
    • Cook, stirring to break up the meat, for about 4-5 minutes until the beef is no longer pink.
    • Stir in the onion flakes and remove from heat; set aside.
  3. Preheat and Prepare:

    • Preheat your oven to 375°F (190°C).
    • Spray a 13″ x 9″ casserole dish with nonstick cooking spray.
  4. Assemble the Casserole:

    • Spread 4 oz of the cooled sauce over the bottom of the prepared casserole dish.
    • Dip 12 tortilla quarters into the remaining sauce and arrange them evenly in the casserole dish.
    • Sprinkle evenly with one-third of the beef mixture, one-fourth of the cheese, and one-fourth of the olives.
    • Top evenly with ½ cup of the sauce.
    • Repeat the layers 2 more times.
    • Dip the remaining 12 tortilla quarters into the remaining sauce and arrange them over the sauce in the casserole dish.
    • Top evenly with the remaining cheese, olives, and sauce.
  5. Bake:

    • Bake, covered, for 35 minutes.
    • Uncover and bake for an additional 25-30 minutes until bubbly and golden.
  6. Serve:

    • Let stand for 5 minutes before serving.
