Instructions:
Step 1: Prepare the Base Cookie Dough
To begin, set the butter at room temperature and place it in a mixing bowl. Add the sugar and mix well until creamy. Gradually incorporate the potato starch, baking powder, and cocoa powder into the mixture. Once the dry ingredients are blended well, add the baking soda. Continue mixing until everything is well combined.
Step 2: Add the Wet Ingredients
When the dry ingredients are fully incorporated into the butter mixture, slowly add the whole milk at room temperature. Stir until you achieve a smooth, dense, and even batter.
Step 3: Pipe the Dough
Transfer the dough into a piping bag and pipe approximately 10 grams of dough into each silicone heart-shaped mold. You should end up with 24 heart-shaped pieces. Alternatively, you can use a spoon to fill the molds, lightly wetting the spoon to prevent the dough from sticking. Tap the molds gently on a flat surface to smooth out the tops, and place the filled molds on a baking sheet.
Step 4: Bake the Whoopie Pies
Preheat your oven to 180°C (350°F) and bake the whoopie pies for 5 minutes. Once baked, remove the molds from the oven and allow the cookies to cool.
Step 5: Prepare the Raspberry Glaze
While the whoopie pies are cooling, prepare the raspberry glaze. Place the raspberries in a tall container and blend them with an immersion blender until smooth. To achieve a silky glaze, strain the raspberry puree through a fine mesh sieve into a bowl, whisking until it reaches a dense, smooth consistency.
Step 6: Glaze the Whoopie Pies
Take 12 cooled heart-shaped cookies and dip them halfway into the raspberry glaze. After dipping, place them on a wire rack to let any excess glaze drip off. Decorate each whoopie pie with 3 dark chocolate chips on top of the glaze.
Step 7: Prepare the Cream Cheese Filling
Transfer the cream cheese into a small bowl and work it with a spatula for a few minutes to soften it. Then, place the softened cream cheese into a piping bag.
Step 8: Assemble the Whoopie Pies
Pipe a generous amount of cream cheese filling onto the plain side of the remaining 12 heart-shaped cookies. Carefully place the glazed cookies on top, with the cream cheese side facing the filling. Continue assembling the remaining whoopie pies in the same way.
Step 9: Chill and Serve
