Yield: 1 3-layer, 8-inch cake

Ingredients:

Quantity Ingredient
1 cup Butter
1 1/2 cups Sugar
2 Eggs
1/4 cup Cake flour
2 Salt
2 1/2 tsp Baking soda
1 cup Buttermilk
1 tsp Vanilla extract
1 tbsp White wine vinegar
1 cup Milk
1 cup Flour
1 cup Unsalted butter
2 cups Confectioners’ sugar
1 tsp Vanilla

Instructions:

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. Grease and flour three 8-inch round cake pans.
  3. Cream together the butter and sugar with an electric mixer until fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Make a paste with the food coloring and cocoa. (Be patient as it takes a few minutes for the cocoa to absorb liquid.)
  6. Add the paste to the butter/sugar mixture.
  7. Sift together the flour, salt, and baking soda.
  8. Add the dry ingredients to the sugar/butter mixture alternately with the buttermilk, mixing well between additions. Start and end with the dry ingredients.
  9. Stir in the vanilla and vinegar after the last addition of the flour mixture.
  10. Beat for another minute, then divide the batter evenly into the prepared pans.
  11. Bake for approximately 35 minutes or until a toothpick inserted into the center comes out clean.
  12. Cool the cakes in the pans for 10 minutes before transferring them to wire racks to cool completely.

Frosting:

  1. To make the icing, mix flour and milk in a small pan and cook over low heat until thickened, stirring often. This will take about 10 minutes.
  2. Remove from heat and allow to cool completely.
  3. Meanwhile, cream together the butter, confectioners’ sugar, and vanilla until very light and fluffy, about 10 minutes.
  4. When the flour mixture is cooled, add it to the butter mixture and beat until just mixed.
  5. Assemble the cake with a thin layer of icing between the layers and cover the top and sides of the cake generously.
