Minestrone Verde Recipe

Ingredients:

  • 1 large onion
  • 1 cup pasta shells
  • 1/2 can kidney beans
  • 1 can great northern beans
  • 1 1/2 cups zucchini, diced
  • 1 1/2 cups broccoli florets
  • 3 asparagus spears, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 2 teaspoons dried basil leaves
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon dried rosemary leaves
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Shredded Parmesan cheese for serving

Instructions:

  1. Prepare Vegetable Broth: Heat vegetable broth and onion in a large saucepan until boiling.

  2. Cook Pasta: Add pasta to the saucepan, reduce heat, and simmer covered for about 5 minutes, until pasta is slightly tender.

  3. Add Beans and Vegetables: Stir in kidney beans, great northern beans, zucchini, broccoli florets, and asparagus. Simmer covered for an additional 6 to 8 minutes, or until the broccoli is tender.

  4. Season: Stir in fresh parsley, fresh basil, dried basil leaves, fresh rosemary, dried rosemary leaves, and minced garlic. Season with salt and pepper according to your taste preference.

  5. Serve: Ladle the Minestrone Verde into bowls and serve with a small plate of shredded Parmesan cheese on the side.
