- In a medium or large saucepan over medium heat, warm the butter or extra virgin olive oil until it shimmers.
- Add the chopped onions and fresh chili peppers, cooking until the onions begin to soften and turn translucent, which should take about 10 minutes.
- Incorporate the paprika, cayenne pepper, and ground cumin into the mixture, continuing to sauté until the onions are fully tender and fragrant, an additional few minutes.
- Introduce the dried lentils, diced tomatoes, tomato puree, and enough water to cover the ingredients. Stir gently to combine.
- Allow the mixture to simmer for approximately 20 minutes, stirring occasionally, until the lentils begin to soften.
- Add the chickpeas, chopped carrots, green beans, zucchini, and frozen green peas to the pot. Stir well to combine.
- Continue to simmer the tagine until all the vegetables are tender, which should take about another 10 to 15 minutes.
- Note: At this stage, the dish can be prepared in advance. Allow it to cool, refrigerate, and consume within a couple of days.
- During the last five minutes of cooking, fold in the chopped parsley and za’atar spice mix. Season to taste with salt and pepper.
