Instructions

  1. In a medium or large saucepan over medium heat, warm the butter or extra virgin olive oil until it shimmers.
  2. Add the chopped onions and fresh chili peppers, cooking until the onions begin to soften and turn translucent, which should take about 10 minutes.
  3. Incorporate the paprika, cayenne pepper, and ground cumin into the mixture, continuing to sauté until the onions are fully tender and fragrant, an additional few minutes.
  4. Introduce the dried lentils, diced tomatoes, tomato puree, and enough water to cover the ingredients. Stir gently to combine.
  5. Allow the mixture to simmer for approximately 20 minutes, stirring occasionally, until the lentils begin to soften.
  6. Add the chickpeas, chopped carrots, green beans, zucchini, and frozen green peas to the pot. Stir well to combine.
  7. Continue to simmer the tagine until all the vegetables are tender, which should take about another 10 to 15 minutes.
  8. Note: At this stage, the dish can be prepared in advance. Allow it to cool, refrigerate, and consume within a couple of days.
  9. During the last five minutes of cooking, fold in the chopped parsley and za’atar spice mix. Season to taste with salt and pepper.
  10. Transfer the Vegetable Tagine to a warm serving dish and serve immediately, garnished with extra parsley if desired.

Enjoy this wholesome Vegetable Tagine as a comforting meal, showcasing the ultimate blend of spices and textures that will delight your taste buds!
