Nutri-carrot Muffins Recipe 🥕

Description: Ummmm good! These are delicious and easy to make. Lucy serves these on her brunch table but they’re great anytime of day.

Ingredients:

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 cup grated carrot
  • 1 egg
  • 1/4 cup canola oil
  • 1/4 cup molasses
  • 1 cup milk
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Instructions:

  1. Mix Dry Ingredients: In a large mixing bowl, combine the whole wheat flour, all-purpose flour, baking powder, and salt.

  2. Incorporate Sugar and Spices: Add the brown sugar and cinnamon to the dry ingredients mixture. Mix well.

  3. Prepare Carrots: Grate enough carrots to make 1 cup. Incorporate the grated carrots into the dry ingredients mixture.

  4. Prepare Wet Ingredients: In a separate bowl, beat the egg lightly. Add the canola oil, molasses, and milk to the beaten egg. Mix until well combined.

  5. Combine Wet and Dry Ingredients: Pour the wet ingredients mixture into the bowl with the dry ingredients. Mix until all ingredients are well combined, creating a thick batter.

  6. Add Raisins and Walnuts: Gently fold in the raisins and chopped walnuts into the batter until evenly distributed.

  7. Preheat Oven: Preheat your oven to 350°F (175°C).

  8. Prepare Muffin Tin: Spray a muffin tin with non-stick cooking spray or line with muffin liners.

  9. Fill Muffin Molds: Spoon the batter into the prepared muffin tin, filling each mold about 2/3 full.

  10. Bake: Place the muffin tin in the preheated oven and bake for 20 to 25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
