Instructions

Step 1: Prepare the Filling

  1. In a mixing bowl, beat 3 egg yolks vigorously until they are well combined. Gradually incorporate the condensed milk, followed by the fresh lemon juice and lemon zest. Mix thoroughly and set the filling aside in the refrigerator while you prepare the crust.

Step 2: Make the Crust

  1. In another mixing bowl, combine the all-purpose flour, 3 tablespoons of granulated sugar, baking powder, and softened margarine or butter. Add 1 whole egg and the cold milk, mixing with your hands until the dough is well combined. If the dough is too sticky, sprinkle in a little more flour to prevent it from sticking to your hands.

  2. Once the dough is ready, press it into a greased 28 cm (11-inch) pie dish. Prick the bottom with a fork to allow steam to escape. Bake the crust in a preheated oven at 350°F (180°C) for about 10 minutes, or until it is almost completely set.

  1. Spoon the meringue over the lemon filling, spreading it evenly to cover the entire pie. For a beautiful finish, you can either place the pie back in the oven for a few minutes until the meringue is golden brown or use a kitchen torch to caramelize the top without returning it to the oven.
