Spicy Sweet and Sour Gurame

Ingredients:

  • 2 large Gurame fish
  • 1 lime
  • 4 red curly chili peppers
  • 7 bird’s eye chili peppers
  • 5 shallots
  • 3 cloves of garlic
  • 1 onion
  • 3 tomatoes
  • Sweet soy sauce, chili sauce, sugar, salt, pepper, and seasoning powder to taste
  • Cooking oil, as needed

Instructions:

  1. Prepare the Fish:
Start by cleaning the Gurame fish under running water, ensuring that all scales and impurities are removed. Once cleaned, rub the fish with the juice of one lime to enhance the flavor and remove any fishy odor. Rinse thoroughly and then coat the fish with salt, letting it sit for about 10 minutes. This step not only flavors the fish but also helps tenderize it. After marinating, fry the fish in hot oil until golden brown and crispy. Set aside.

  2. Chop the Vegetables:
While the fish is frying, take the time to prepare your aromatics. Slice the red curly chili peppers and bird’s eye chilies into thin rings. Finely chop the shallots and garlic, and set them aside. Dice the tomatoes into small cubes and slice the onion into thin strips. These fresh ingredients will form the flavorful base of your sauce.

  3. Cook the Sauce:
In a large skillet or wok, heat a generous amount of cooking oil over medium heat. Add all the chopped vegetables to the pan and sauté until they become fragrant and the shallots turn translucent. This will release the essential oils and flavors from the vegetables, creating a delicious aroma.

  4. Combine the Flavors:
Once the vegetables are aromatic, pour in the sweet soy sauce and chili sauce. Add a splash of water to create a saucy consistency. Stir well to combine all the ingredients. As the mixture heats up, add sugar, salt, pepper, and seasoning powder to taste, adjusting according to your preference for sweetness and spiciness.

  5. Add the Fish:
Gently place the fried Gurame fish into the skillet with the sauce. Allow the fish to simmer in the sauce for a few minutes, ensuring that the flavors seep into the fish, enriching its taste. This step is crucial for marrying the flavors of the sauce with the fish.

  6. Serve:
Once the fish has absorbed the delicious sauce and the kitchen is filled with enticing aromas, carefully transfer the fish to a serving platter. Garnish with additional chopped chilies or fresh herbs if desired, and serve hot with steamed rice for a delightful meal.

Enjoy your homemade Spicy Sweet and Sour Gurame, a dish that balances vibrant flavors and textures, perfect for any occasion!
