  • 1 coconut (grated)
  • 1-inch piece fresh ginger
  • 2 lemons
  • 1 teaspoon mustard seeds
  • Salt, to taste
  • Cooking oil

For Coconut Chutney:

  • 1 coconut (grated)
  • 2 teaspoons cooking oil
  • 1 teaspoon mustard seeds
  • Salt, to taste

Instructions:

  1. Prepare Lemon Rice:

    • Cook the long-grain rice with salt to taste and allow it to cool. Ensure the grains are separate.
    • Heat oil in a wok and add mustard seeds. Lower the heat.
    • Once the seeds splutter, add roasted peanuts, turmeric powder, and cayenne pepper powder. Remove from heat.
    • Add the cooled rice to the mixture.
    • Squeeze the juice of two lemons onto the rice and carefully stir to incorporate, avoiding breaking the rice grains.
    • Adjust the lemon juice according to taste preference.
    • Serve with coconut chutney, mint chutney, tomato ketchup, and potato crisps.
  2. Prepare Coconut Chutney:

    • Grind grated coconut, fresh ginger, and salt together to form a paste, adding enough water as needed.
    • In a small wok, heat cooking oil and add mustard seeds. Once they splutter, remove from heat and pour over the coconut paste.
