Quick & Easy Cashew Chicken Recipe 🍲

Description

A delightful dish inspired by the flavors of popular restaurant-style cashew chicken, perfected through experimentation in the home kitchen. This recipe has quickly become a household favorite, especially for my husband! Easily adjustable for spice lovers by adding crushed red pepper along with the garlic, onion, and cumin.

1 Garlic clove

1 Teaspoon of cumin powder
3 Teaspoons of sesame oil
3 Teaspoons of water
1 Seasoning packet (included in cashew can)

Instructions

  1. Begin by dicing the chicken breast into small, bite-sized pieces, approximately 1/2″ to 3/4″ cubed.

  2. Chop the onion into small pieces.

  3. Heat a wok on the stove over high heat, adding a small amount of sesame oil to coat the bottom of the pan.

  4. Once the oil is hot, add the diced chicken to the wok along with the chopped onion, garlic, onion powder, and cumin powder.

  5. Continuously stir the chicken and onion mixture until the chicken is fully cooked through and lightly browned. This should take about 5-6 minutes.

  6. Once the chicken is cooked, remove it from the pan and set it aside.

  7. In the same wok (no need to clean it!), empty the can of Planter’s fancy cashews into the pan and stir-fry for about 2 minutes until they are lightly toasted and fragrant.

  8. Return the cooked chicken and onion mixture to the pan with the cashews.

  9. Add the seasoning packet from the cashew can and just enough water to dissolve the seasoning. Stir everything together and allow it to cook for an additional 3 minutes, ensuring the flavors meld together beautifully.

  10. Once everything is heated through and well combined, serve your delicious cashew chicken with steamed white rice for a complete and satisfying meal!
