  • 4 baking potatoes
  • 2/3 cup butter
  • 2/3 cup flour
  • 1 1/2 cups milk
  • 4 green onions
  • 1 cup sour cream
  • 6-8 strips of bacon
  • 5 ounces sharp cheddar cheese
  • Onion powder
  • Garlic powder
  • Seasoned croutons
  • Salt and pepper to taste

Instructions:

Step Description
1 Preheat your oven to 350 degrees Fahrenheit. Wash the baking potatoes thoroughly and then place them in the oven. Bake for approximately 1 hour or until they are tender.
2 Once the potatoes are fully cooked, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise, and carefully scoop out the cooked potato flesh, leaving the skins intact. Set aside the potato flesh for later use.
3 Take two of the potato skins and chop them into small pieces. Discard the remaining potato skins.
4 In a medium saucepan, melt the butter over medium heat. Once melted, slowly whisk in the flour until it forms a smooth paste.
5 Gradually pour in the milk, whisking constantly to prevent lumps from forming. Continue to whisk until the mixture is thick and creamy.
6 Season the mixture with salt, pepper, onion powder, and garlic powder, stirring to combine. Allow the mixture to simmer over low heat, stirring frequently, until it begins to bubble.
7 Once the mixture is hot and bubbling, add in the reserved potato flesh and the chopped potato skins. Stir well to combine.
8 Finely chop the green onions, reserving some for garnish. Add most of the chopped green onions to the soup, saving a small amount for topping.
9 Next, stir in the sour cream and crumbled bacon, mixing until fully incorporated. Allow the soup to cook on low heat for an additional 10 minutes, stirring occasionally.
10 Gradually add three-fourths of the shredded sharp cheddar cheese to the soup, stirring until it is fully melted and incorporated.
11 Once the cheese is melted and the soup is heated through, taste and adjust the seasoning as needed.
12 To serve, ladle the hot soup into bowls and top with a sprinkle of shredded cheddar cheese, reserved chopped green onions, and seasoned croutons.
