  • 3 cups water
  • 1 teaspoon salt
  • 1 1/2 cups long grain rice
  • 4 Roma tomatoes
  • 1 tablespoon vinegar
  • 4 green onions
  • 1 1/2 cups cilantro leaves
  • 3/4 cup green chiles
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Use a 3-quart saucepan with a tight-fitting lid to cook the rice.

  2. Combine water and salt in the pan and bring it to a rolling boil.

  3. Add rice to the boiling water, cover the pan, and reduce the heat to low.

  4. Cook the rice for about 20 minutes or until the grains are tender and the water is absorbed.

  5. While the rice is cooking, prepare the vegetables.

  6. Chop Roma tomatoes into small pieces and place them in a small bowl.

  7. Season the tomatoes lightly with salt, sprinkle in the vinegar, and toss to cover all tomato pieces.

  8. Cut off the root ends and about 2 inches of the green tops from the washed green onions.

  9. Slice the onions into very thin rings and add them to the tomatoes.

  10. Once the rice is finished cooking, stir in the prepared tomatoes, onions, cilantro leaves, and green chiles.

  11. Season with salt and pepper to taste.

  12. Serve the green rice hot, and if desired, top it with a dab of sour cream for extra creaminess.
