Description: This delightful recipe for Alice’s Apple Cake hails from the famed Alice Bay Cookbook. Don’t be put off by the unconventional buttermilk sauce – it’s a surprising complement to the flavors of the cake. This recipe is so good that I always make a double batch to ensure there’s plenty to go around!

Ingredients:

Quantity Ingredient
3 cups All-purpose flour
1 tsp Baking soda
1 tsp Ground cinnamon
2 cups Sugar
3 Eggs
1 1/4 cups Vegetable oil
1 tsp Vanilla extract
1/4 cup Orange juice
1 tsp Grated orange peel
2 Apples, peeled and chopped
1 cup Chopped walnuts
1 cup Flaked coconut

Buttermilk Sauce:

Quantity Ingredient
1 cup Sugar
1/2 cup Butter
1/2 tsp Baking soda
1/2 cup Buttermilk

Instructions:

  1. Preheat oven to 325°F (165°C).

  2. Grease and flour a 10-inch tube pan.

  3. Sift together flour, baking soda, and cinnamon onto waxed paper.

  4. In a large bowl, combine sugar, eggs, oil, vanilla, orange juice, and orange peel. Beat with an electric mixer until well blended.

  5. Stir in the sifted flour mixture until well mixed.

  6. Fold in chopped apples, walnuts, and coconut until evenly distributed throughout the batter.

  7. Spoon the batter into the prepared pan, spreading it evenly.

  8. Bake in the preheated oven for 1 1/2 hours, or until the top of the cake springs back when lightly pressed with a fingertip.

  9. Cool the cake in the pan on a wire rack for 15 minutes.

  10. Transfer the cake from the pan to a serving plate with a raised edge.

  11. Puncture the top of the cake all over with a wooden pick or skewer.

  12. Prepare the Buttermilk Sauce: In a medium saucepan, combine sugar, butter, baking soda, and buttermilk. Cook over medium heat, stirring constantly, until the mixture comes to a boil.

  13. Remove the sauce from the heat and spoon it over the warm cake, allowing it to soak in.

  14. Repeat the process, spooning the hot Buttermilk Sauce over the cake several times.

  15. Let the cake stand for about an hour before serving to allow the flavors to meld.

  16. Pour any extra Buttermilk Sauce into a small pitcher and serve alongside the cake.

  17. Enjoy the delicious flavors of Alice’s Apple Cake with its unique Buttermilk Sauce!

This recipe yields a moist and flavorful apple cake that’s perfect for any occasion. Whether you’re serving it for dessert after a weeknight dinner or as a sweet treat for a special gathering, this cake is sure to impress with its combination of tender apples, crunchy walnuts, and tropical coconut, all topped off with the rich and tangy Buttermilk Sauce.
