Buttermilk Chicken Wings à la Gerry Girianza

Ingredients:

  • 6 chicken wings, halved
  • 125 ml full cream milk
  • 1 lemon
  • 1 packet of crispy chicken seasoning flour (such as Sasa brand)
  • Salt, to taste
  • Sugar, to taste
  • Black pepper, to taste
  • Cooking oil, for frying

Optional Sauce:

  • 1 tablespoon Ibu Jari chili sauce
  • 1 tablespoon Indofood Bangkok sauce
  • 1/2 tablespoon melted butter (optional, for a richer flavor)

Instructions:

  1. Prepare the Chicken:

    • Season the chicken wings with salt, sugar, and black pepper.
    • In a bowl, mix full cream milk with the juice of one lemon.
    • Marinate the seasoned chicken wings in the milk and lemon mixture for at least 30 minutes. For best results, marinate overnight in the refrigerator.
  2. Coat the Chicken:

    • Drain excess liquid from the marinated chicken wings.
    • Coat each wing thoroughly in the crispy chicken seasoning flour.
  3. Frying:

    • Heat cooking oil in a frying pan over medium heat.
    • Fry the chicken wings until they turn golden brown and crispy.
  4. Optional Sauce Preparation:

    • In a small bowl, combine Ibu Jari chili sauce, Indofood Bangkok sauce, and melted butter (if using).
  5. Serving:

    • Once the chicken wings are crispy and golden, remove from the oil and drain on paper towels to remove excess oil.
    • Serve immediately, optionally drizzling the prepared sauce over the wings or serving it on the side for dipping.
