Ingredients
- 4 tablespoons sesame seeds
- 2/3 cup hazelnuts
- 1/2 cup cashews
- 1/2 cup chickpeas
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 3 twists of freshly ground black pepper
- 1 teaspoon paprika
Instructions
-
Prepare the Flatbread: Preheat your oven to 350°F (175°C). Place the pitas on a baking sheet and bake for about 10 minutes, or until they are crisp and lightly browned. Remove from the oven and break into pieces suitable for dipping.
-
Toast the Sesame Seeds: In a dry skillet over medium heat, toast the sesame seeds until they turn golden brown and aromatic. Transfer them to a bowl and set aside.
-
Toast the Nuts and Chickpeas: Using the same skillet, add the hazelnuts and chickpeas. Toast them for 4-5 minutes until they become fragrant. Stir occasionally to ensure even toasting.
-
Toast the Spices: To the skillet, add the cumin seeds, dried thyme, and continue to toast until the seeds darken slightly and release their aroma. Remove from heat and let cool for a few minutes.
-
Combine and Season: In a food processor or using a mortar and pestle, combine the toasted sesame seeds, hazelnuts, chickpeas, cumin seeds, dried thyme, salt, pepper, and paprika. Pulse or grind until the mixture has a coarse texture, ensuring not to over-process to maintain a crunchy consistency.
-
Serve: Transfer the Dukkah to a serving bowl. Drizzle with olive oil if desired. Serve alongside the crispy pita pieces for dipping and enjoy the rich flavors of this Middle Eastern treat.
