Ingredients

Main Dough:

  • 250 grams cakra flour
  • 100 grams Segitiga flour
  • 8 grams yeast
  • 80 grams granulated sugar
  • 1 whole egg + 1 egg yolk
  • 40 cc liquid milk
  • 80 grams butter
  • 6 grams salt

Beef Filling:

  • 2 packs (400 grams) of original corned beef or finely minced beef
  • 1 onion, thinly sliced
  • 2 shallots, coarsely sliced
  • 1 stalk green onion, thinly sliced (optional)
  • Sweet soy sauce
  • Oyster sauce
  • Soy sauce
  • Pepper
  • Sugar and salt to taste
  • Water
  • Sesame oil

For Topping:

  • Bread crumbs
  • Egg white

Instructions

  1. Prepare the Starter Dough:

    • In a bowl, mix 150 grams of cakra flour with 150 cc of lukewarm water and 1/4 teaspoon of instant yeast using a spoon. Allow the mixture to sit at room temperature for 1 hour. Then, cover it with cling wrap and refrigerate for approximately 14-18 hours. Do not let it sit for more than 18 hours; 16 hours is ideal.
  2. Prepare the Main Dough:

    • In a large mixing bowl, combine 250 grams of cakra flour, 100 grams of Segitiga flour, 8 grams of yeast, and 80 grams of granulated sugar. Mix well.
    • Add 1 whole egg and 40 cc of liquid milk. Gradually pour the liquid mixture into the flour while mixing until the dough comes together. Avoid adding too much liquid at once to prevent the dough from becoming too wet.
    • Incorporate the starter dough from the refrigerator into the mixture. Knead until the dough is smooth and elastic.
    • Add 80 grams of butter and 6 grams of salt to the dough. Continue kneading until the dough is smooth and elastic. This process might take about 10-15 minutes.
  3. Let the Dough Rise:

    • Allow the dough to rise in a warm place until it doubles in size. Once risen, divide the dough into 40-gram portions and shape each portion into a ball. Let these dough balls rest for 10 minutes while preparing the filling.
  4. Prepare the Beef Filling:

    • Heat a little oil in a pan and sauté the onions and shallots until fragrant.
    • Add the minced beef or corned beef and cook until the meat changes color.
    • Add enough water to the pan along with sweet soy sauce, oyster sauce, soy sauce, pepper, sugar, and salt to taste. Cook until the flavors are well combined and the mixture is slightly juicy but not too dry. Drain any excess liquid.
  5. Assemble the Buns:

    • Flatten each dough ball into a disc shape. Place a spoonful of the beef filling in the center. Gather the edges of the dough around the filling and pinch to seal.
    • Arrange the filled buns on a baking tray lined with parchment paper. Let them rise for about 1 hour.
  6. Prepare for Baking:

    • Preheat your oven to 180°C (350°F).
    • Brush the surface of each bun with egg white and sprinkle with bread crumbs.
  7. Bake:

    • Bake the buns in the preheated oven for about 12-15 minutes, or until they are golden brown. The baking time may vary depending on the size of the buns.
  8. Serve:

    • Remove the buns from the oven and let them cool slightly before serving. These buns are best enjoyed fresh but will remain soft and delicious even the next day.
