Ayam Geprek: Crispy Fried Chicken with Spicy Sambal
Ingredients:
- 500 grams (1/2 kg) chicken breast
- 2 large eggs
- 5 tablespoons all-purpose flour
- 3 tablespoons cornstarch
- To taste: black pepper, salt, and Royco seasoning (or chicken bouillon)
- To taste: ground coriander (ketumbar)
- Water as needed
- 3 cloves garlic
- To taste: turmeric powder
- Sambal Bawang:
- 20 red chilies
- 3 cloves garlic
- To taste: salt and Royco seasoning
- Hot oil for frying

Prepare the Chicken: - Wash the chicken breast thoroughly.
- In a pot, bring water to a boil and add crushed garlic, salt, turmeric powder, and Royco seasoning.
- Submerge the chicken breast in the boiling water and cook until tender. Once cooked, remove and drain the chicken well.

Prepare the Coating: - In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, Royco seasoning, and ground coriander.
- Beat the eggs in a separate bowl.
- Dip each piece of chicken into the beaten eggs, ensuring it is fully coated.
- Roll the chicken in the flour mixture, pressing gently to ensure the coating sticks well.

Fry the Chicken: - Heat oil in a deep pan or fryer to 180°C (350°F) for deep frying.
- Carefully place the coated chicken pieces into the hot oil and fry until golden brown and crispy. This should take about 5-7 minutes depending on the size of the chicken pieces.
- Remove the chicken from the oil and drain on paper towels.

Prepare the Sambal Bawang: - In a food processor or blender, grind the red chilies and garlic together with salt and Royco seasoning to taste until smooth.
- Heat a small amount of oil in a pan until hot and pour it over the chili-garlic mixture to make the sambal.

Assemble the Dish: - Place the crispy fried chicken on a serving plate.
- Gently smash or “penyet” the chicken with the back of a spoon or a pestle to slightly flatten it.
- Top the chicken with the spicy sambal bawang.
