Ayam Geprek Sambel Trasi: A Spicy Indonesian Fried Chicken Delight

Ingredients:

For the Chicken:

  • 3 pieces of chicken (preferably thighs or drumsticks)
  • Crispy flour (I use crispy flour mix)

For the Marinade:

  • 3 cloves of garlic
  • A pinch of coriander
  • A pinch of salt
  • A pinch of flavor enhancer

For the Sambel (Chili Sauce):

  • 3 shallots
  • 1 clove of garlic
  • 4 small chilies
  • 1 large chili
  • A small piece of trasi (fermented shrimp paste)
  • A pinch of salt

Instructions:

  1. Prepare the Marinade: Begin by blending the garlic, coriander, salt, flavor enhancer, and turmeric until smooth. Add a little water to create a paste. Marinate the chicken pieces in this mixture for about 5 minutes.

  2. Coat the Chicken: Once the chicken is well-marinated, dredge each piece in crispy flour, ensuring an even coating.

  3. Fry the Chicken: Heat oil in a frying pan over medium heat. Fry the coated chicken pieces until they are golden brown and cooked through. Remove and drain on paper towels.

  4. Prepare the Sambel: While the chicken is frying, make the sambel. Blend the shallots, garlic, small chilies, large chili, and trasi until smooth. Add a pinch of salt to taste.

  5. Assemble the Dish: Once the chicken is fried and crispy, place it on a serving plate. Spread the sambel over the chicken and gently crush the chicken with the back of a spoon to mix the flavors.
