Ayam Sambal Ijo: Spicy Green Chili Chicken Recipe
Ingredients
- 1 kg chicken pieces
- 1 packet chicken frying seasoning (bumbu ukep ayam goreng)
- 20 green chilies
- 14 small green chilies
- 1/2 teaspoon salt
- 4 shallots
- 4 cloves garlic
- 1 teaspoon sugar
- Cooking oil for frying

Prepare the Chicken:
- Clean and cut the chicken into pieces.
- In a blender or food processor, grind 4 cloves of garlic, 5 green chilies, and 5 small green chilies into a smooth paste.
- Heat a little oil in a pan over medium heat. Sauté the ground paste until fragrant.
- Add 50 cc (about 1/4 cup) of water to the pan, stirring to combine with the sautéed paste.
- Add the chicken pieces to the pan and mix well to coat them with the paste.
- Stir in the chicken frying seasoning (bumbu ukep ayam goreng). Cover and simmer until the chicken is fully cooked and the flavors have melded.

Fry the Chicken:
- Heat enough cooking oil in a separate pan over medium-high heat.
- Once the oil is hot, fry the marinated chicken pieces until golden brown and crispy. Remove from oil and drain on paper towels.

Prepare the Sambal (Chili Sauce):
- In a pan, lightly fry 15 chopped green chilies, 9 small green chilies, and 4 shallots until fragrant. Remove from heat and let them cool.
- Once cooled, blend the fried ingredients into a smooth paste.
- Mix in 1/2 teaspoon of salt and 1 teaspoon of sugar.

Combine and Serve:
- Toss the fried chicken pieces with the sambal, ensuring they are well coated with the spicy sauce.
- Garnish with fresh herbs such as basil leaves, cucumber slices, and shredded cabbage for added freshness and crunch.
