Ayam Kampung Geprek with Mango Sambal

Ingredients:

  • 1 whole kampung chicken (free-range chicken), cut into pieces
  • 1-inch piece of turmeric
  • 1-inch piece of ginger
  • 5 shallots
  • 1 tablespoon coriander seeds
  • Salt, to taste
  • For the Sambal:
    • 1/2 green mango, peeled and grated
    • 100 grams red chilies
    • 4 green tomatoes
    • Salt, to taste
    • Sugar, to taste

Instructions:

  1. Prepare the Chicken:

    • Cut the kampung chicken into pieces as desired and clean thoroughly.

    • In a mortar and pestle or food processor, grind together the turmeric, ginger, coriander seeds, shallots, and salt until you achieve a smooth paste.
