Telor Ceplok Kentang Balado: A Spicy Indonesian Delight

Ingredients:

  • 5 medium potatoes
  • 5 large eggs
  • 8 red chilies
  • 4 shallots
  • 2 garlic cloves
  • 1 ripe red tomato
  • Salt, to taste
  • Chicken-flavored seasoning, to taste

Instructions:

  1. Prepare the Potatoes: Begin by peeling the potatoes and cutting them into small cubes. To prevent discoloration, submerge the potato cubes in a bowl of water. Once ready, drain the potatoes and pat them dry with a paper towel.

  2. Fry the Potatoes: Heat oil in a frying pan over medium heat. Fry the potato cubes until they turn golden brown and crispy. Remove from the oil and set aside to drain on paper towels.

  3. Fry the Eggs: In the same pan, fry the eggs one at a time without adding any seasoning. Once cooked, remove them and set aside.

  4. Prepare the Spice Paste: Blend the red chilies, shallots, garlic, and red tomato until smooth. Heat a bit of oil in a pan over medium heat, then sauté the blended spice paste until it becomes fragrant.

  5. Season the Spice Paste: Add salt to the sautéed spice paste to taste. Stir well to combine.

  6. Combine Ingredients: Add the fried eggs to the spice paste and stir briefly to coat them with the spices. Then, gently fold in the fried potatoes. Sprinkle with chicken-flavored seasoning and adjust seasoning to taste.

  7. Serve: Enjoy this dish warm, perfect for a hearty meal or as a flavorful side.

Tips: For an extra kick, you can adjust the amount of red chilies according to your spice preference. This dish pairs wonderfully with steamed rice and is sure to be a hit at any meal.
