Oriental Egg and Tofu Stir-Fry

Ingredients:

  • 2 eggs
  • 2 blocks of firm tofu
  • 3 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 1 large red chili, sliced
  • 1 tomato, chopped
  • Green onions, chopped
  • 2 packets of sambal sauce (chili sauce)
  • 2 tablespoons oyster sauce

Instructions:

  1. Prepare the Tofu: Start by frying the tofu in a pan until it is half-cooked. Once done, remove from heat and set aside.

  2. Make the Egg Omelette: Beat the eggs with a pinch of salt. Cook the eggs in a pan to make a thin omelette. Once cooked, cut the omelette into bite-sized pieces and set aside.

  3. Sauté the Aromatics: In the same pan, heat a little oil and sauté the minced garlic and chopped onion until they become fragrant and translucent.

  4. Add Vegetables and Sauces: Incorporate the sliced red chili and chopped tomato into the pan. Cook until the tomato softens and releases its juices. Stir in the sambal sauce and oyster sauce, mixing well.

  5. Simmer the Sauce: Add a splash of water to the pan and bring the mixture to a boil. This will help to create a flavorful sauce.

  6. Combine Ingredients: Taste the sauce and adjust the seasoning as needed. Gently fold in the previously fried tofu and pieces of omelette, ensuring they are well coated with the sauce.

  7. Finish and Serve: Sprinkle chopped green onions over the top. Stir everything together to combine and heat through. Serve hot, and enjoy!
