Instructions

  1. Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

  2. Prepare the Crust: In a small bowl, combine the graham cracker crumbs with white sugar. Pour in the melted butter and mix well until fully blended. Press this mixture evenly onto the bottom of a greased 9-inch springform pan. Set aside.

  3. Make the Cheesecake Filling: In a large mixing bowl, combine the cream cheese, sugar, and cornstarch. Using a mixer, beat the ingredients until smooth. Add the eggs and yolk, one at a time, mixing until well incorporated. Stir in the whipping cream, vanilla extract, and lemon zest. Gently fold in the blueberries.

  4. Combine and Add Berries: Pour the cream cheese mixture over the prepared graham cracker crust. Randomly drop the raspberries and blackberries over the top; they will naturally sink into the cheesecake as it bakes.

  5. Bake the Cheesecake: Bake in the preheated oven for 15 minutes. Then, lower the temperature to 225°F (107°C) and bake for an additional 1 hour and 15 minutes, or until the center appears set and no longer looks wet or shiny.

  6. Chill: After baking, run a knife around the inner edge of the springform pan to prevent cracking. Chill the cheesecake uncovered in the refrigerator overnight.

  7. Serving Suggestions: You can also incorporate strawberries into the berry mixture, but be sure not to exceed a total of 2 cups of fruit. For a twist, this cheesecake can be made with just one type of berry if preferred.

Enjoy this exquisite Blueberry, Raspberry, and Blackberry Cheesecake, a dessert that will surely impress family and friends alike!
