Milk Peda (Indian Sweet) Recipe

Milk Peda, also known as Doodh Peda, is a rich and indulgent Indian sweet, perfect for festivals, celebrations, or any special occasion. This traditional dessert is made with milk powder, condensed milk, and ghee, giving it a creamy texture and a delicious, melt-in-your-mouth flavor. Infused with the warmth of cardamom and the luxurious taste of saffron, this dessert is sure to impress your family and friends. Here’s how you can make this delightful sweet at home:

Ingredients:

Ingredient Quantity
Milk Powder 1 cup
Condensed Milk 1 cup
Ghee 2 to 3 tablespoons
Cardamom Powder (Elaichi) 1/2 teaspoon
Saffron Strands 7 to 8 strands
Milk 2 tablespoons

Preparation Time: 30 minutes

Cooking Time: 15 minutes

Total Time: 45 minutes

Servings: 6

Cuisine: Indian

Course: Dessert

Diet: Vegetarian

Instructions:

  1. Soak Saffron
Begin by soaking the saffron strands in 2 tablespoons of warm milk. Let it soak for 10 to 15 minutes. For better color and flavor, you can also refrigerate it overnight.

  2. Heat Ghee and Condensed Milk
In a heavy-bottomed pan or kadai, heat 2 to 3 tablespoons of ghee over low heat. Once the ghee melts, add the condensed milk to the pan. Allow it to come to a gentle boil while stirring occasionally.

  3. Add Milk Powder
Slowly add the milk powder to the pan. Keep stirring vigorously to avoid lumps. Use a whisk if necessary to ensure the mixture stays smooth and lump-free.

  4. Cook the Mixture
Stir continuously over low to medium heat. As the mixture cooks, it will start to thicken. Be patient, as this step is crucial for achieving the right consistency for the peda.

  5. Add Saffron Milk and Cardamom
Once the mixture has thickened, add the saffron-infused milk and cardamom powder to the pan. Stir the mixture well to combine all the flavors.

  6. Continue Stirring
The mixture may loosen slightly after adding the saffron milk. Keep stirring constantly until it thickens again and begins to leave the sides of the pan, indicating that it is ready.

  7. Check the Consistency
When the mixture starts coming together and forms a dough-like consistency, it’s time to test it. Take a small amount of the mixture and roll it into a ball using your greased palms. If it rolls smoothly into a ball, the mixture is ready. If it feels sticky, cook for another 2 to 3 minutes on low heat, stirring constantly.

  8. Shape the Peda
Once the mixture has reached the right consistency, turn off the heat and remove the pan from the stove. Let the mixture cool slightly. Grease your palms with a little ghee, then pinch a small lime-sized portion of the mixture and roll it into a smooth ball.

  9. Flatten and Decorate
After rolling the ball, flatten it gently into a disk shape. You can use a flower-shaped stencil to make impressions on the peda or simply press your finger in the center to create a dimple. If desired, garnish the peda with chopped pistachios or a few saffron strands for a decorative touch.

  10. Cool and Serve
Let the Milk Peda cool to room temperature. Serve these delightful pedas to your friends and family during festivals, special occasions, or as a sweet treat anytime.

Tips:

  • Saffron Infusion: For a richer color and flavor, soak saffron in milk overnight.
  • Texture Tip: Ensure the mixture thickens properly to avoid a runny consistency. If the mixture is too soft, continue cooking until it firms up.
  • Variations: You can also garnish the Milk Peda with slivered almonds or pistachios for an added crunch.
