Uggani Recipe (Puffed Rice Upma)
Description:
Uggani is a delightful variety of Upma made from puffed rice, commonly enjoyed in North Karnataka and parts of Andhra Pradesh. Easy to prepare and bursting with flavor, it serves as a perfect choice for breakfast, a light snack, or even a light dinner.

Ingredients:
- 3 cups Puffed rice
- 4 tablespoons Roasted Gram Dal (Pottukadalai)
- 1 Onion, chopped
- 1 Tomato, chopped
- 4 Green Chillies
- Chopped Coriander (Dhania) Leaves
- 1 Lemon
- 1 teaspoon Turmeric powder (Haldi)
- Salt, to taste
For Seasoning:
- 1 teaspoon Mustard seeds (Rai/Kadugu)
- 1 teaspoon White Urad Dal (Split)
- 1/2 teaspoon White Urad Dal (Split)
- Raw Peanuts (Moongphali), a few
- Curry leaves, a few
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Instructions:
- Start by powdering the roasted chana dal and setting it aside.
- In a large bowl, fill it with water and add the puffed rice. Rinse the puffed rice well and immediately drain the water. Squeeze out any excess water using both palms.
- Heat oil in a heavy-bottomed pan. Once hot, add mustard seeds, urad dal, chana dal, and peanuts. Let them brown, then add curry leaves and green chillies. Cook for about 40 seconds.
- Add the chopped onions and turmeric powder, sautรฉing until the onions become translucent.
- Add the chopped tomatoes and salt, and sautรฉ until the tomatoes turn soft and mushy.
- Stir in the puffed rice and mix well. Add the powdered roasted chana dal, chopped coriander leaves, and lemon juice. Stir everything together and cook for 2-3 minutes, allowing the flavors to blend.
- Serve your Uggani with a fresh fruit bowl and a cup of filter coffee for a complete South Indian breakfast experience.
