Kollu Masala Dosa Recipe – High Protein Horse Gram Dosa

Kollu Masala Dosa, also known as Horse Gram Dosa, is a nutritious and delicious breakfast option from Konkani cuisine. This high-protein dosa, made with horse gram (Kollu) and rice, is packed with flavor and makes for an excellent vegetarian South Indian breakfast. Serve it with coconut chutney and Vengaya Sambar for a satisfying meal.

Ingredients:

For the Dosa Batter:

  • 1 cup Rice
  • 1/2 cup Horse Gram Dal (Kollu/ Kulith)
  • 1 tsp Methi Seeds (Fenugreek Seeds)
  • Water, as needed
  • Salt, to taste
  • Oil, for frying

For the Potato Stuffing:

  • 2 Potatoes (Aloo), cooked and cubed
  • 1 Onion, sliced
  • 1/2 tsp Mustard Seeds (Rai/ Kadugu)
  • 1 sprig Curry Leaves
  • 1/2 tsp Turmeric Powder (Haldi)
  • 1/2 tsp Red Chilli Powder
  • 1 Green Chilli, chopped
  • 1/2 cup Coriander (Dhania) Leaves, chopped (for garnish)
  • 1 tsp Oil

Preparation Time: 15 mins

Soaking Time: 5 hours
Fermentation Time: 8-10 hours or overnight
Cook Time: 30 mins

Instructions:

  1. Prepare the Dosa Batter:

    • Clean and wash the rice, horse gram dal, and fenugreek seeds. Soak them together in water for about 5 hours.
    • Grind the soaked ingredients along with a little water to form a thick batter.
    • Cover the batter and allow it to ferment for 8-10 hours or overnight.
  2. Prepare the Potato Stuffing:

    • In a pan, heat 1 tsp of oil and add mustard seeds and curry leaves. Let them splutter.
    • Add the sliced onions and green chilli, sauté until the onions become soft.
    • Stir in the turmeric powder and red chilli powder, followed by the boiled potato cubes. Roughly mash the potatoes and mix well.
    • Add salt to taste and stir everything together. Turn off the flame and garnish with chopped coriander leaves. Set aside the aloo masala.
  3. Make the Kollu Dosa:

    • Once the batter has fermented, mix it well and adjust the consistency with water, if needed. Add salt to taste.
    • Heat a dosa tawa on medium flame and grease it with a little oil.
    • Pour a ladle of batter on the tawa and spread it evenly in a circular shape.
    • Drizzle some oil around the edges and cook the dosa until it turns golden brown and crispy. Flip the dosa to cook the other side.
    • Once both sides are cooked, place a generous amount of potato masala in the center of the dosa and fold it in half.
  4. Serve:
    Serve the Kollu Masala Dosa hot, accompanied by coconut chutney and Vengaya Sambar for a complete and hearty South Indian breakfast.
