Kerala-style Stir-Fried Carrots and Beans with Coconut
Description:
Thoran is a traditional Kerala side dish, typically served alongside a main meal. It involves finely chopped vegetables cooked with coconut and spices. Carrot and Beans Thoran is a flavorful combination of tender carrots and beans, seasoned with a variety of spices, and finished off with a tempering of mustard seeds and curry leaves. It’s a popular dish during festivals as well.

Ingredients:
- 3 carrots, chopped
- 20 green beans, chopped
- 1 onion, chopped
- 3 green chilies, sliced
- 1 tsp cumin powder
- 1/2 tsp turmeric powder
- Salt to taste
- 1 tbsp oil
- 1/4 tsp mustard seeds
- 10 curry leaves
- 1/4 cup grated coconut

Instructions:
- Wash and chop the carrots and beans into small pieces.
- In a mixing bowl, combine the chopped vegetables with onion, green chilies, cumin powder, turmeric powder, and salt. Mix everything well.
- Heat oil in a pan. Add the mustard seeds and curry leaves. Sauté for about 10 seconds until they crackle.
- Add the vegetable mixture to the pan, stir well, and cover with a lid. Let it cook on medium heat for 20 minutes, or until the vegetables are soft and tender.
- Once the vegetables are cooked, add the grated coconut and mix everything together. Cook for an additional 3 minutes.
- Remove from heat and serve hot, paired with mixed vegetable sambar and rice for a wholesome meal.
