Gobi Ke Kofte (Cauliflower Kofta)

Ingredients:
For the Koftas:
- 250g cauliflower, grated
- 1/2 cup gram flour (besan)
- 1 tsp red chili powder
- 2 green chilies, finely chopped
- Salt, to taste
- Water, as needed
- Oil, for frying
For the Gravy:
- 1 tbsp ginger garlic paste
- 1/2 cup yogurt
- 2 onions, blended into a paste
- 2 bay leaves
- 2 green cardamoms
- 1/2-inch cinnamon stick
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- Salt, to taste
- Oil, as required
- Water, as needed
- Fresh coriander leaves, finely chopped for garnish

Make the Koftas:
In a bowl, combine grated cauliflower, gram flour, red chili powder, chopped green chilies, salt, and a little water. Mix well to form a dough-like consistency. Shape this mixture into small round balls (koftas).Heat oil in a pan and fry the koftas until golden brown. Once fried, place them on a kitchen towel to remove excess oil. Set aside.

Prepare the Gravy:
In a separate pan, heat oil. Add bay leaves, green cardamoms, and cinnamon stick. Let it sizzle for a minute, then add ginger garlic paste and cook for 5-8 minutes, stirring occasionally.Add the blended onion paste and cook until the mixture becomes golden brown.
Next, add red chili powder, turmeric powder, coriander powder, and salt. Cook for an additional 5 minutes.
Reduce the heat and add yogurt, mixing well. Add water to adjust the consistency of the gravy, then cook for 4-5 minutes.

Combine Koftas and Gravy:
Add the fried koftas to the gravy and cook for 2 more minutes, allowing the koftas to soak in the flavors of the gravy.Turn off the heat and garnish with chopped fresh coriander leaves.
