  • 2 green chilies, finely chopped
  • Salt, to taste

For the Gravy:

  • 1 tbsp ginger garlic paste
  • 1/2 cup yogurt
  • 2 onions, blended into a paste
  • 2 bay leaves
  • 2 green cardamoms
  • 1/2-inch cinnamon stick
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • Salt, to taste
  • Oil, as required
  • Water, as needed
  • Fresh coriander leaves, finely chopped for garnish

Preparation Time: 15 minutes
Cooking Time: 60 minutes

Instructions:

  1. Make the Koftas:
In a bowl, combine grated cauliflower, gram flour, red chili powder, chopped green chilies, salt, and a little water. Mix well to form a dough-like consistency. Shape this mixture into small round balls (koftas).

Heat oil in a pan and fry the koftas until golden brown. Once fried, place them on a kitchen towel to remove excess oil. Set aside.

  2. Prepare the Gravy:
In a separate pan, heat oil. Add bay leaves, green cardamoms, and cinnamon stick. Let it sizzle for a minute, then add ginger garlic paste and cook for 5-8 minutes, stirring occasionally.

Add the blended onion paste and cook until the mixture becomes golden brown.

Next, add red chili powder, turmeric powder, coriander powder, and salt. Cook for an additional 5 minutes.

Reduce the heat and add yogurt, mixing well. Add water to adjust the consistency of the gravy, then cook for 4-5 minutes.

  3. Combine Koftas and Gravy:
Add the fried koftas to the gravy and cook for 2 more minutes, allowing the koftas to soak in the flavors of the gravy.

Turn off the heat and garnish with chopped fresh coriander leaves.

  4. Serving Suggestion:
Serve the Gobi Ke Kofte hot with boondi raita and tawa paratha for a complete meal. Enjoy!
