Preparation Time: 20 minutes
Cook Time: 20 minutes
Instructions:
-
Prepare the Dough:
- In a mixing bowl, combine buckwheat flour, green chilies, mashed potato, and rock salt. Add red chili powder and black pepper powder, adjusting to your taste. Mix well.
- Gradually add water and knead to form a soft dough. Cover the dough and let it rest for 5 minutes.
-
Prepare the Filling:
- For the filling, crumble the paneer in a bowl and add green chilies, black pepper, and rock salt. Optionally, stir in coriander leaves for added flavor. Mix everything thoroughly.
-
Shape the Kachori:
- Heat oil in a shallow frying pan.
- Take a small ball of the dough, and press it lightly between your palms to form a small disc. Make an indent in the center of the disc.
- Place the prepared paneer filling in the indent and carefully bring the edges of the dough together, closing it into a ball.
- Gently flatten the stuffed ball to form a kachori.
- Dust the kachori with some dry buckwheat flour to ensure it doesn’t stick during frying.
-
Fry the Kachori:
- Heat oil in a heavy-bottomed pan over medium heat. Add the kachoris and shallow fry them until golden and crisp on both sides.
- Once cooked, remove the kachoris from the pan and place them on a paper towel to drain excess oil.
-
Serve:
- Serve the Vrat Ki Kachoris hot, paired with a side of No Onion No Garlic Dhaniya Pudina Chutney for a perfect fasting snack.
Enjoy this crispy, flavorful kachori as an ideal snack during your fasting period!
