Vrat Ki Kachori Recipe (Savory Buckwheat Paneer Pastry)

This Vrat Ki Kachori (also known as Kuttu Ki Kachori) is a delightful savory pastry filled with a spiced paneer (cottage cheese) mixture, perfect for fasting days like Navratri. Made with buckwheat flour (kuttu ka atta), this gluten-free pastry offers a crisp, flavorful treat without the use of onion, garlic, or wheat flour. Ideal for those following a vegetarian, no-grain, and no-onion-no-garlic diet during fasting periods, this snack is shallow-fried to perfection.

Ingredients:

For the Kachori/Pastry:

  • 100 grams Buckwheat Flour (Kuttu Ka Atta)
  • 2 Green Chilies, chopped
  • Rock Salt, to taste
  • 1/2 teaspoon Red Chilli Powder
  • Black Pepper Powder, to taste (adjust as preferred)
  • 1 Potato (Aloo), boiled & mashed
  • Water, to knead the dough
  • Oil, for shallow frying

For the Filling:

  • 1 cup Paneer (Homemade Cottage Cheese)
  • Rock Salt, to taste
  • Black Pepper Powder, to taste
  • 2 Green Chilies, chopped
  • 1 tablespoon Coriander Leaves (optional)

Preparation Time: 20 minutes
Cook Time: 20 minutes

Instructions:

  1. Prepare the Dough:

    • In a mixing bowl, combine buckwheat flour, green chilies, mashed potato, and rock salt. Add red chili powder and black pepper powder, adjusting to your taste. Mix well.
    • Gradually add water and knead to form a soft dough. Cover the dough and let it rest for 5 minutes.
  2. Prepare the Filling:

    • For the filling, crumble the paneer in a bowl and add green chilies, black pepper, and rock salt. Optionally, stir in coriander leaves for added flavor. Mix everything thoroughly.
  3. Shape the Kachori:

    • Heat oil in a shallow frying pan.
    • Take a small ball of the dough, and press it lightly between your palms to form a small disc. Make an indent in the center of the disc.
    • Place the prepared paneer filling in the indent and carefully bring the edges of the dough together, closing it into a ball.
    • Gently flatten the stuffed ball to form a kachori.
    • Dust the kachori with some dry buckwheat flour to ensure it doesn’t stick during frying.
  4. Fry the Kachori:

    • Heat oil in a heavy-bottomed pan over medium heat. Add the kachoris and shallow fry them until golden and crisp on both sides.
    • Once cooked, remove the kachoris from the pan and place them on a paper towel to drain excess oil.
  5. Serve:

    • Serve the Vrat Ki Kachoris hot, paired with a side of No Onion No Garlic Dhaniya Pudina Chutney for a perfect fasting snack.
