Ayam Betutu: A Flavorful Indonesian Delight

Ayam Betutu is a traditional Indonesian dish known for its rich and aromatic flavors. Originating from Bali, this dish features chicken marinated and cooked in a blend of spices, resulting in tender and flavorful meat. Here’s how to recreate this exquisite dish at home.

Ingredients:

  • Chicken:

    • 1/2 kg of chicken (preferably free-range for a more authentic taste)
  • Spice Paste (Bumbu Halus):

    • 3 candlenuts (kemiri)
    • 1/2 teaspoon black pepper (merica)
    • 1 teaspoon coriander seeds (ketumbar)
    • 4 red curly chilies (cabe merah keriting)
    • 7 bird’s eye chilies (cabe rawit)
    • 4 cm fresh turmeric (kunyit), peeled
    • A small amount of shrimp paste (terasi)
    • Salt and sugar, to taste
  • Sliced Spices (Bumbu Iris):

    • 9 shallots (bawang merah), thinly sliced
    • 4 cloves garlic (bawang putih), thinly sliced
    • 4 cm galangal (kencur), sliced
    • 3 cm ginger (jahe), sliced
    • 7 red curly chilies (cabe merah keriting), sliced (add more bird’s eye chilies if you prefer extra heat)
    • 2 stalks lemongrass (serai), bruised

Instructions:

  1. Prepare the Spice Paste:

    • In a food processor or mortar and pestle, blend the candlenuts, black pepper, coriander seeds, red curly chilies, bird’s eye chilies, fresh turmeric, and shrimp paste into a smooth paste. Adjust the salt and sugar to taste.
  2. Cook the Aromatics:

    • Heat a little oil in a pan over medium heat. Sauté the sliced shallots, garlic, galangal, ginger, red curly chilies, and lemongrass until fragrant and the shallots are translucent.
  3. Combine and Simmer:

    • Add the spice paste to the pan with the sautéed aromatics. Stir well and cook until the mixture is aromatic and the oil starts to separate from the paste.
  4. Add the Chicken:

    • Place the chicken pieces into the pan, ensuring they are well-coated with the spice mixture. Add enough water to cover the chicken partially.
  5. Simmer the Chicken:

    • Reduce the heat to low, cover the pan, and let the chicken simmer gently. Cook until the chicken is tender and the flavors have fully penetrated the meat. This usually takes about 30-45 minutes, depending on the size of the chicken pieces.
  6. Final Adjustments:

    • Check the seasoning and adjust with more salt and sugar if needed. The chicken should be flavorful with a balance of spicy, savory, and slightly sweet notes.
  7. Serve:

    • Once cooked, remove the chicken from the pan and serve hot with steamed rice and your choice of vegetables.
