Soto Ayam: Indonesian Chicken Soup Delight

Ingredients

  • 8 shallots
  • 2 cloves of garlic
  • 2 scallions
  • 2 candlenuts
  • 2 slices of galangal, crushed
  • 1 piece of turmeric
  • 2 stalks of lemongrass, crushed
  • 4 kaffir lime leaves
  • 1 slice of ginger
  • Fried chicken, cut into small, thin pieces
  • Chicken broth
  • 1 potato, thinly sliced and fried until crispy
  • Salt
  • Pepper

Instructions

  1. Prepare the Aromatics:

    • Start by frying the shallots, garlic, and candlenuts until they are golden brown and aromatic. Once fried, blend these ingredients together with the pepper and turmeric until a smooth paste forms.
  2. Sauté the Spice Paste:

    • In a heated pan, sauté the spice paste you’ve just made. Add the crushed galangal, lemongrass, and kaffir lime leaves. Continue to sauté until the mixture is fragrant and slightly browned.
  3. Simmer the Broth:

    • Bring your chicken broth to a boil in a large pot. Once boiling, add the sautéed spice mixture into the broth, stirring well to combine. Allow the broth to continue boiling, letting the flavors meld together beautifully.
  4. Season and Enhance:

    • Add salt and the sliced scallions into the simmering broth. Let it cook for an additional two minutes to ensure the flavors are well incorporated. After two minutes, remove the pot from heat.
  5. Serve the Chicken:

    • You can either add the fried chicken pieces directly into the broth or serve them separately on a plate, depending on your preference.
  6. Plating the Dish:

    • Serve the Soto Ayam hot, alongside a plate of steamed rice. Top with the crispy fried potato slices for added texture and flavor.

Enjoy your delicious, aromatic Soto Ayam, a true representation of Indonesian culinary heritage, perfect for a comforting meal.
