Soto Daging Sapi | Clear Beef Soup Recipe

Ingredients:

🌶 For Boiling:

  • 700 grams beef (cut into pieces)
  • 1 liter mineral water
  • 2 liters beef bone broth
  • 2 stalks lemongrass (white part only, bruised)
  • 5 bay leaves (torn into pieces)
  • 5 kaffir lime leaves (torn into pieces)
  • 1/2 teaspoon granulated sugar
  • Salt to taste
  • 2 stalks green onions (sliced)

🌶 For Spices (Blended and Sautéed):

  • 2 tablespoons coriander seeds
  • 2 teaspoons ground black pepper
  • 10 medium shallots
  • 6 medium garlic cloves
  • 6 candlenuts (traditionally toasted, optional)
  • 5 cm ginger (peeled)
  • 3 tablespoons cooking oil (for sautéing)

🌶 For Garnishing:

  • Cooked white rice
  • Fried shallots
  • Lime wedges
  • 2 ripe tomatoes (sliced)
  • 2 stalks green onions (sliced)

🌶 For Sambal (Boiled and Blended):

  • 5 shallots
  • 16 red bird’s eye chilies
  • 1/4 teaspoon granulated sugar
  • Salt to taste

Instructions:

  1. Preparing the Beef:

    • In a large pot, combine the beef with 1 liter of mineral water, bay leaves, kaffir lime leaves, and bruised lemongrass. Bring to a boil over medium-high heat.
    • Reduce the heat and simmer for about 1 hour, or until the beef becomes tender. Skim off any foam that rises to the surface.
    • Once the beef is tender, remove it from the pot and set aside to cool slightly. Discard the boiling liquid and the aromatic herbs.
  2. Blending the Spices:

    • While the beef is cooking, blend the coriander seeds, black pepper, shallots, garlic, candlenuts, and ginger into a smooth paste. If needed, add a little water to facilitate blending.
  3. Sautéing the Spices:

    • Heat the cooking oil in a pan over medium heat. Add the blended spice paste and sauté until fragrant and the oil starts to separate from the paste.
  4. Combining Ingredients:

    • Return the cooked beef to the pot and add the sautéed spice paste. Pour in the beef bone broth and season with salt and sugar to taste.
    • Bring the mixture to a boil, then reduce the heat and let it simmer until the beef is fully tender and the flavors are well combined. Stir in the sliced green onions and cook until aromatic. Turn off the heat.
  5. Preparing the Sambal:

    • Boil the shallots and red chilies until soft. Blend them into a smooth paste, then season with salt and sugar to taste.
  6. Serving:

    • Serve the hot beef soup over bowls of steamed white rice or separately as desired. Garnish with fried shallots, lime wedges, sliced tomatoes, and additional sliced green onions. For an extra kick, add a spoonful of sambal to your bowl.

You can customize the presentation according to your family’s preferences. Some enjoy the hot soup poured over the rice, while others prefer to keep them separate.
