For the Spice Paste:

  • 5 shallots
  • 8 curly red chilies
  • 4 garlic cloves
  • 2 candlenuts
  • 4 kaffir lime leaves
  • 2 tomatoes

Instructions:

  1. Prepare the Spice Paste:

    • In a blender or food processor, combine the shallots, curly red chilies, garlic, candlenuts, kaffir lime leaves, and tomatoes. Blend into a smooth paste.
  2. Cook the Spice Paste:

    • Heat a generous amount of oil in a pan over medium heat. Add the spice paste and sauté, stirring frequently, until the paste releases its fragrant aroma and the oil begins to separate from the paste.
  3. Add Liquid and Seasonings:

    • Gradually add a small amount of water to the pan while stirring. Add the palm sugar and bay leaves, allowing the mixture to simmer until the paste thickens slightly.
  4. Incorporate the Vegetables and Shrimp:

    • Add the fried potato chunks to the pan, stirring to coat them with the spice mixture. Add the fried shrimp and continue to cook, stirring occasionally.
  5. Combine and Simmer:

    • Gently fold in the fried boiled eggs, making sure they are coated with the sauce. Add a little more water if necessary to achieve your desired consistency. Cover and let simmer briefly.
  6. Final Adjustments:

    • After simmering, uncover the pan and stir in the sweet soy sauce, salt, and MSG to taste. Adjust seasoning as needed to suit your preference.
  7. Serve:

    • Once the dish is well-seasoned and the flavors have melded together, remove from heat. Serve hot, garnished with additional kaffir lime leaves if desired.
