Telur Bumbu Bali (Balinese Spiced Eggs)

Ingredients

  • 4 hard-boiled eggs, fried until golden
  • 2 kaffir lime leaves (remove the central vein)
  • 1 stalk lemongrass, bruised
  • 50 ml water
  • Salt, chicken bouillon powder, and palm sugar to taste
  • Oil for sautéing

For the Spice Paste:

  • 6 shallots
  • 3 cloves garlic
  • 10 red curly chilies
  • Fried shrimp paste to taste
  • 1 thumb-sized piece of ginger

Instructions

  1. Prepare the Spice Paste: In a blender or mortar and pestle, combine shallots, garlic, red chilies, shrimp paste, and ginger. Blend or pound into a smooth paste.

  2. Sauté the Spice Paste: Heat oil in a pan over medium heat. Add the spice paste, kaffir lime leaves, and lemongrass. Sauté until the mixture becomes fragrant and the raw aroma disappears.

  3. Season the Dish: Add salt, chicken bouillon powder, and palm sugar to the pan. Stir well to combine all the flavors.

  4. Add the Eggs: Gently place the fried eggs into the pan, ensuring they are well coated with the spice mixture. Stir occasionally to avoid burning and ensure even cooking.

  5. Cook and Simmer: Pour in the water and bring the mixture to a simmer. Cook until the eggs are fully infused with the spices and the water has mostly evaporated, creating a thick, flavorful sauce.

  6. Serve: Transfer the Telur Bumbu Bali to a serving dish. Enjoy this flavorful dish with steamed rice or as a side dish in a larger meal.

Notes

  • Egg Preparation: To achieve the perfect texture, ensure the eggs are hard-boiled and then fried to create a slightly crispy exterior.
  • Spice Level: Adjust the amount of red chilies according to your preferred spice level. For a milder version, reduce the chilies or deseed them before blending.
  • Aromatic Boost: The kaffir lime leaves and lemongrass are essential for authentic Balinese flavor. Do not skip these ingredients.
