Batam-Style Crispy Garlic Fried Chicken

Ayam Goreng Bawang khas Batam

Ingredients:

  • 1/2 chicken (2 chicken breasts), cut into small pieces
  • 3 tablespoons cornstarch
  • 2 teaspoons fine salt
  • To taste: chicken broth powder or granulated sugar (optional)
  • 1 egg, beaten
  • A pinch of ground black pepper
  • 1 teaspoon ground coriander
  • For the spice paste:
    • 6 cloves garlic
    • 5 shallots
    • 1.5 inches fresh ginger
    • 1-inch piece of turmeric root

Instructions:

  1. Prepare the Chicken:

    • Rinse the chicken pieces thoroughly and set aside.
  2. Make the Spice Paste:

    • Blend together the garlic, shallots, ginger, and turmeric root until smooth.
  3. Marinate the Chicken:

    • In a mixing bowl, combine the chicken pieces with the spice paste, cornstarch, salt, and optional chicken broth powder or granulated sugar for added flavor. Mix well until the chicken is evenly coated.
    • Add the beaten egg and continue to mix until all the ingredients are fully incorporated.
    • Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld.
  4. Prepare for Frying:

    • Heat oil in a pan over medium heat.
  5. Fry the Garlic:

    • Once the oil is hot, add the garlic and fry until golden brown. Remove the garlic and set aside.
  6. Fry the Chicken:

    • In the same pan, add the marinated chicken pieces. Fry over medium heat until the chicken turns golden brown and is cooked through.
  7. Finish and Serve:

    • Once the chicken is cooked, remove it from the pan and place it on a serving plate.
    • Sprinkle the fried garlic over the top.
    • Serve hot and enjoy this Batam-style fried chicken with its irresistible garlic flavor.
