Instructions:

  1. Prepare Ingredients: Begin by preheating your oven to 350°F (175°C). Grate the carrots and apples, and set aside. Also, gather all the other ingredients needed for the recipe.

  2. Mix Dry Ingredients: In a large bowl, combine the flour, baking soda, and cinnamon. Mix well to ensure even distribution of the leavening agents and spices.

  3. Cream Wet Ingredients: In another large bowl, cream together the sugar and I Can’t Believe It’s Not Butter® Spread until light and fluffy. Add the eggs one at a time, beating well after each addition.

  4. Combine Wet and Dry Ingredients: Gradually add the grated carrots, grated apples, raisins, and almonds to the sugar, butter, and egg mixture. Mix until all the ingredients are well incorporated. Then, gently fold in the flour mixture until just combined. Be careful not to overmix, as this can result in tough muffins.
